White Chocolate Covered Peppermint Sandwich Cookies

In my quest to make my final list for my Christmas Cookie trays, I stumbled upon this delicousness via pintrest. The photo and recipe comes from cupcakesandcrablegs. I would probably use mint oreos, or those pepperment Joe Joes from Trader joes.
White Chocolate Covered Peppermint Cookies
1 package Oreo cookies
6 ounces white chocolate
1 package peppermint sprinkles
Melt white chocolate.
Dip each Oreo in the white chocolate, then lay out on a paper towel or baking rack.
Sprinkle with peppermint sprinkles.
Let them cool for about 30 minutes.

This is just what I was looking to find. A friend made these for a party last year and when I found myself at a Trader Joe's this November I picked up a box. I was about ready to just make up my own, but now I've got some proportions to go by!
